Thai Peanut Noodle Bowl
A delicious and easy Thai-inspired noodle bowl with a creamy peanut sauce.

Main Ingredients
- 8 oz rice noodles cooked according to package instructions
- 1 cup shredded carrots
- 1 cup red bell pepper sliced
- ½ cup chopped cilantro
- ¼ cup chopped peanuts
Peanut Sauce
- ¼ cup peanut butter creamy
- 2 tablespoon soy sauce
- 1 tablespoon lime juice fresh
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon sriracha optional
- 2-3 tablespoon water to thin the sauce
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a mixing bowl, whisk together all the peanut sauce ingredients until smooth. Add water to thin if necessary.
3. In a large bowl, combine the cooked noodles, shredded carrots, red bell pepper, and cilantro.
4. Pour the peanut sauce over the noodle mixture and toss to coat evenly.
5. Serve the noodle bowl topped with chopped peanuts. Enjoy!
