Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Green Curry Paste
  • 400 ml Coconut Milk
  • 500 g Chicken Breast sliced
  • 2 cups Mixed Vegetables chopped
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1 cup Basil Leaves fresh

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 2-3 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the chicken slices and cook for 5-7 minutes until cooked through.
  5. Add the mixed vegetables and cook for another 5 minutes.
  6. Stir in the fish sauce and sugar, and cook for another 2 minutes.
  7. Remove from heat and stir in the fresh basil leaves.
  8. Serve hot with steamed rice.
