Ingredients

  • 2 large cucumbers sliced thin
  • 1 medium red onion sliced thin
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped peanuts optional

Instructions 

  1. In a large mixing bowl, combine the sliced cucumbers and red onion.
  2. In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar is dissolved.
  3. Pour the dressing over the cucumber and onion mixture. Toss to coat evenly.
  4. Sprinkle with chopped cilantro and peanuts, if using. Serve immediately or refrigerate for up to 2 hours before serving.
