Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 cup mushrooms, sliced
  • 1 cup shredded chicken cooked
  • 2 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 cup cherry tomatoes, halved
  • 1 handful fresh cilantro, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  2. Add the red curry paste and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add the coconut milk, mushrooms, and chicken. Simmer for another 5 minutes.
  5. Stir in the fish sauce, lime juice, and sugar. Add the cherry tomatoes and cook for another 2 minutes.
  6. Serve hot, garnished with fresh cilantro.
