Ingredients 

Main Ingredients

  • 500 g Sweetbreads cleaned and trimmed
  • 2 tablespoon Butter
  • 1 tablespoon Olive Oil
  • 1 Lemon juiced
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Soak sweetbreads in cold water for 2 hours, changing water several times.
  2. 2. Blanch sweetbreads in boiling water for 5 minutes, then transfer to ice water.
  3. 3. Remove membranes and pat dry.
  4. 4. Heat butter and olive oil in a skillet over medium heat.
  5. 5. Add sweetbreads and cook until golden brown, about 5-7 minutes per side.
  6. 6. Add garlic and cook for another minute.
  7. 7. Squeeze lemon juice over sweetbreads and season with salt and pepper.
  8. 8. Serve hot.
