Instructions
1. Soak sweetbreads in cold water for 2 hours, changing water several times.
2. Blanch sweetbreads in boiling water for 5 minutes, then transfer to ice water.
3. Remove membranes and pat dry.
4. Heat butter and olive oil in a skillet over medium heat.
5. Add sweetbreads and cook until golden brown, about 5-7 minutes per side.
6. Add garlic and cook for another minute.
7. Squeeze lemon juice over sweetbreads and season with salt and pepper.
8. Serve hot.
