Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and sliced into ¼ inch rounds
  • 1 cup All-Purpose Flour
  • 1 cup Cold Water
  • 1 large Egg lightly beaten
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • as needed Vegetable Oil for frying

Instructions 

  1. Heat the oil in a deep fryer or large pot to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, cold water, egg, baking powder, and salt until just combined. Do not overmix.
  3. Dip the sweet potato slices into the batter, allowing any excess to drip off.
  4. Carefully place the battered sweet potato slices into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side.
  5. Remove the tempura from the oil and drain on paper towels. Serve immediately.
