Main Ingredients
- 2 large sweet potatoes peeled and cubed
- 1 onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Olive oil for sautéing
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
Add sweet potatoes and cumin, cook for a few minutes.
Pour in vegetable broth, bring to a boil. Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
Use an immersion blender to puree the soup until smooth.
Stir in coconut milk, season with salt and pepper. Heat through and serve.
