Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 medium russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley

Instructions 

  1. 1. Boil the sweet potatoes and russet potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper.
  3. 3. Add the cooled potatoes to the bowl and toss to coat evenly with the dressing.
  4. 4. Gently fold in the chopped green onions and parsley.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
