  • 2 large Sweet Potatoes peeled and grated
  • 1 small Onion grated
  • 2 large Eggs beaten
  • ¼ cup Flour
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ½ cup Vegetable Oil for frying

Instructions 

  1. 1. Grate the sweet potatoes and onion into a large bowl.
  2. 2. Add the beaten eggs, flour, salt, and pepper. Mix well.
  3. 3. Heat the vegetable oil in a frying pan over medium heat.
  4. 4. Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula.
  5. 5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. 6. Drain on paper towels and serve hot.
