Ingredients

  • 2 cups Sweet Potatoes peeled and cubed
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoon Tahini
  • 2 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 2 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cubed sweet potatoes on a baking sheet and roast for 20 minutes or until tender.
  3. In a food processor, combine the roasted sweet potatoes, chickpeas, tahini, olive oil, garlic, cumin, salt, and lemon juice.
  4. Blend until smooth, adding water if needed to reach desired consistency.
  5. Serve with pita bread, crackers, or fresh veggies.
