Instructions
Preheat oven to 425°F (220°C).
Toss diced sweet potatoes with olive oil, chili powder, cumin, and salt. Spread on a baking sheet.
Roast for 25-30 minutes, until tender and slightly caramelized.
In a skillet, heat black beans until warm.
Warm tortillas in a dry skillet or microwave.
Assemble tacos with roasted sweet potatoes, black beans, salsa, and chopped cilantro.
