Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 8 small tortillas
  • 1 cup salsa
  • ½ cup cilantro chopped

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Toss diced sweet potatoes with olive oil, chili powder, cumin, and salt. Spread on a baking sheet.
  3. Roast for 25-30 minutes, until tender and slightly caramelized.
  4. In a skillet, heat black beans until warm.
  5. Warm tortillas in a dry skillet or microwave.
  6. Assemble tacos with roasted sweet potatoes, black beans, salsa, and chopped cilantro.
