Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 avocado, diced (for topping) optional
  • 1 cilantro, chopped (for topping) optional

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add sweet potatoes, chili powder, cumin, and smoked paprika. Stir to coat.
  4. Add diced tomatoes, black beans, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30-35 minutes, until sweet potatoes are tender.
  6. Season with salt and pepper. Serve with optional toppings.
