Ingredients 

Main Ingredients

  • 500 g Chicken Breast cut into bite-sized pieces
  • 1 Bell Pepper cut into chunks
  • 1 Onion cut into chunks
  • 1 cup Pineapple Chunks canned or fresh
  • 2 tablespoon Vegetable Oil

Sauce Ingredients

  • ¼ cup Ketchup
  • ¼ cup Rice Vinegar
  • ¼ cup Brown Sugar
  • ¼ cup Soy Sauce
  • 2 tablespoon Cornstarch mixed with 2 tablespoon water

Instructions 

  1. 1. Heat the vegetable oil in a wok over medium-high heat.
  2. 2. Add the chicken pieces and cook until browned and cooked through. Remove from wok and set aside.
  3. 3. In the same wok, add the bell pepper and onion. Stir-fry until they start to soften.
  4. 4. Add the pineapple chunks and cook for another 2 minutes.
  5. 5. Return the chicken to the wok.
  6. 6. In a bowl, mix together the ketchup, rice vinegar, brown sugar, soy sauce, and cornstarch mixture. Pour into the wok.
  7. 7. Stir everything together until the sauce thickens and coats the chicken and vegetables.
  8. 8. Serve hot over rice.
