  • 1 cup sun-dried tomatoes packed in oil, drained
  • ½ cup olive oil
  • ½ cup grated Parmesan cheese
  • ¼ cup pine nuts toasted
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. Combine sun-dried tomatoes, garlic, pine nuts, and Parmesan cheese in a food processor.
  2. Pulse until finely chopped.
  3. With the processor running, slowly add olive oil and lemon juice until smooth.
  4. Season with salt and pepper to taste.
  5. Serve immediately or store in an airtight container in the refrigerator.
