- 2 cups grated summer squash
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil for frying
1. Grate the summer squash and place it in a mixing bowl.
2. Add the flour, eggs, salt, and pepper to the bowl. Mix well.
3. Heat the olive oil in a frying pan over medium heat.
4. Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula.
5. Cook for about 3-4 minutes on each side, until golden brown.
6. Remove from the pan and drain on paper towels. Serve warm.
