Summer Squash Casserole
A delicious and easy summer squash casserole perfect for a family dinner.

Main Ingredients
- 4 cups sliced summer squash
- 1 cup chopped onion
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup crushed crackers
- ½ cup melted butter
- to taste salt and pepper
Preheat oven to 350°F (175°C).
In a large pot, cook squash and onion in boiling water for 5 minutes. Drain well.
In a large bowl, combine squash, onion, cheese, sour cream, salt, and pepper.
Pour mixture into a lightly greased baking dish.
In a small bowl, mix crushed crackers and melted butter. Sprinkle over the squash mixture.
Bake in preheated oven for 25-30 minutes, or until lightly browned.
