Ingredients

  • 4 cups sliced summer squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • ½ cup melted butter
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, cook squash and onion in boiling water for 5 minutes. Drain well.
  3. In a large bowl, combine squash, onion, cheese, sour cream, salt, and pepper.
  4. Pour mixture into a lightly greased baking dish.
  5. In a small bowl, mix crushed crackers and melted butter. Sprinkle over the squash mixture.
  6. Bake in preheated oven for 25-30 minutes, or until lightly browned.
