Ingredients

  • 4 ears Corn shucked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • ¼ cup Cilantro chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Cook the corn in boiling water for 5-7 minutes. Let it cool, then cut the kernels off the cob.
  2. 2. In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, and red onion.
  3. 3. Drizzle with olive oil and lime juice. Toss to combine.
  4. 4. Add chopped cilantro, salt, and black pepper to taste. Mix well.
  5. 5. Serve immediately or refrigerate for later.
