Ingredients

  • 4 green bell peppers tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes drained
  • 1 cup shredded cheese optional
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Mix cooked beef, rice, diced tomatoes, salt, and pepper in a bowl.
  4. Stuff each bell pepper with the beef mixture and place in a baking dish.
  5. Bake for 45 minutes. If using cheese, sprinkle on top during the last 10 minutes of baking.
