  • cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 1 cup heavy cream
  • 1 cup fresh strawberries, diced

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Gently fold in the heavy cream and strawberries until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and shape into a 1-inch thick circle. Cut into 8 wedges and place on the prepared baking sheet.
  6. Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
