Ingredients

  • 4 Eggs
  • 2 cups Dashi
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Mirin
  • ½ teaspoon Salt
  • 4 Shrimp peeled and deveined
  • 4 Mushrooms sliced

Instructions 

  1. In a mixing bowl, whisk the eggs gently.
  2. Add dashi, soy sauce, mirin, and salt to the eggs. Mix well.
  3. Strain the mixture through a sieve to remove any lumps.
  4. Divide the shrimp and mushrooms among four cups.
  5. Pour the egg mixture into the cups, filling them about ¾ full.
  6. Cover each cup with aluminum foil.
  7. Steam the cups in a steamer for about 20 minutes, or until the custard is set.
  8. Serve warm.
