Split Pea Soup Recipe

Main Ingredients
- 1 lb dried split peas
- 1 ham bone or ham hock
- 1 large onion, chopped
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Rinse the split peas under cold water.
2. In a large pot, combine split peas, ham bone, onion, carrots, celery, garlic, and chicken broth.
3. Bring to a boil, then reduce heat and simmer for about 1.5 hours, until peas are tender.
4. Remove ham bone, chop any meat, and return meat to the pot.
5. Season with thyme, salt, and pepper. Simmer for another 15 minutes.
6. Serve hot.
