Instructions
Heat olive oil in a pot over medium heat.
Add chopped onion and garlic, sauté until softened.
Add spinach and cook until wilted.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Use a blender to puree the soup until smooth.
Return soup to pot, stir in milk, and season with salt and pepper to taste. Heat through before serving.
