Ingredients 

Salad Ingredients

  • 6 cups fresh spinach washed and dried
  • 4 slices bacon chopped
  • ¼ cup red onion thinly sliced
  • ¼ cup sliced mushrooms

Dressing Ingredients

  • 3 tablespoons bacon drippings
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Cook the bacon in a skillet over medium heat until crisp. Remove bacon and set aside, reserving the drippings.
  2. In a mixing bowl, whisk together the bacon drippings, red wine vinegar, Dijon mustard, honey, salt, and black pepper.
  3. In a large bowl, combine the spinach, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
  4. Top the salad with the cooked bacon pieces. Serve immediately.
