Spinach Salad with Warm Bacon Mustard Dressing

Salad Ingredients
- 6 cups fresh spinach washed and dried
- 4 slices bacon chopped
- ¼ cup red onion thinly sliced
- ¼ cup sliced mushrooms
Dressing Ingredients
- 3 tablespoons bacon drippings
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Cook the bacon in a skillet over medium heat until crisp. Remove bacon and set aside, reserving the drippings.
In a mixing bowl, whisk together the bacon drippings, red wine vinegar, Dijon mustard, honey, salt, and black pepper.
In a large bowl, combine the spinach, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
Top the salad with the cooked bacon pieces. Serve immediately.
