Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine spinach, ricotta cheese, mozzarella cheese, and minced garlic.
Roll out puff pastry sheets and cut into squares.
Place a spoonful of the spinach mixture onto each square and roll up.
Brush each roll-up with beaten egg.
Place roll-ups on a baking sheet and bake for 20 minutes or until golden brown.
