  • 12 large mushrooms stems removed
  • 1 cup spinach chopped
  • ½ cup feta cheese crumbled
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, feta cheese, minced garlic, olive oil, salt, and pepper.
  3. Stuff each mushroom cap with the spinach and feta mixture.
  4. Place stuffed mushrooms on a baking sheet.
  5. Bake for 20 minutes or until mushrooms are tender and the filling is golden brown.
  6. Serve warm.
