Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Stir in the minced garlic, ground cumin, ground coriander, paprika, and red pepper flakes. Cook for another 2 minutes.
Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and black pepper to taste.
Garnish with fresh cilantro before serving.
