Instructions
In a large mixing bowl, combine chicken, black beans, corn, bell pepper, green onions, cheese, cumin, chili powder, salt, and black pepper.
Place an egg roll wrapper on a clean surface. Add about 2 tablespoons of the filling mixture to the center of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up tightly. Seal the edges with a bit of water.
Heat oil in a frying pan over medium heat. Fry the egg rolls until golden brown and crispy, about 2-3 minutes per side.
Drain on paper towels and serve warm with your favorite dipping sauce.
