Southwest Breakfast Burritos

Main Ingredients
- 4 large flour tortillas
- 6 large eggs beaten
- 1 cup shredded cheese cheddar or Mexican blend
- 1 cup cooked breakfast sausage crumbled
- 1 cup diced bell peppers mixed colors
- 1 cup diced onions
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
1. Heat the olive oil in a skillet over medium heat. Add the diced onions and bell peppers, and cook until softened.
2. Add the crumbled sausage to the skillet and cook until heated through.
3. Pour the beaten eggs into the skillet, and scramble until fully cooked. Season with salt and pepper.
4. Warm the tortillas in a separate pan or microwave.
5. Divide the egg mixture evenly among the tortillas. Top with shredded cheese.
6. Roll up the tortillas to form burritos. Serve immediately.
