  • 4 fillets Catfish
  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 cup Buttermilk
  • 2 cups Vegetable oil for frying

Instructions 

  1. 1. In a shallow dish, mix together the cornmeal, flour, salt, pepper, and paprika.
  2. 2. Pour the buttermilk into another shallow dish.
  3. 3. Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture, pressing to coat well.
  4. 4. Heat the vegetable oil in a large frying pan over medium-high heat.
  5. 5. Fry the catfish fillets in the hot oil until golden brown and cooked through, about 3-4 minutes per side.
  6. 6. Remove the fillets from the oil and drain on paper towels.
