Southern Dill Potato Salad

Main Ingredients
- 2 pounds red potatoes cut into bite-sized pieces
- ½ cup mayonnaise
- ¼ cup dill pickle relish
- 2 tablespoons fresh dill chopped
- 1 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 units hard-boiled eggs chopped
- ¼ cup chopped celery
- ¼ cup chopped green onions
1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
2. In a large mixing bowl, combine mayonnaise, dill pickle relish, fresh dill, mustard, salt, and pepper.
3. Add the cooled potatoes, chopped eggs, celery, and green onions to the bowl. Mix gently to combine.
4. Chill the salad in the refrigerator for at least 1 hour before serving.
