- 1 pound dried black-eyed peas
- 1 ham hock or 4 slices of bacon
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes
- 4 cups chicken broth
- 2 cups water
Rinse and sort the black-eyed peas.
In a large pot, cook the ham hock or bacon until browned.
Add the onion and garlic, cook until softened.
Add the black-eyed peas, salt, black pepper, and red pepper flakes.
Pour in the chicken broth and water.
Bring to a boil, then reduce heat and simmer for about 1 hour, or until peas are tender.
