Ingredients

  • 1 pound dried black-eyed peas
  • 1 ham hock or 4 slices of bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes
  • 4 cups chicken broth
  • 2 cups water

Instructions 

  1. Rinse and sort the black-eyed peas.
  2. In a large pot, cook the ham hock or bacon until browned.
  3. Add the onion and garlic, cook until softened.
  4. Add the black-eyed peas, salt, black pepper, and red pepper flakes.
  5. Pour in the chicken broth and water.
  6. Bring to a boil, then reduce heat and simmer for about 1 hour, or until peas are tender.
