Smashed Cucumber Salad Recipe

Main Ingredients
- 2 large cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon salt
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds toasted
1. Smash the cucumbers with the flat side of a knife and cut into bite-sized pieces.
2. Place the cucumbers in a bowl and sprinkle with salt. Let sit for 10 minutes.
3. Drain any excess water from the cucumbers.
4. Add minced garlic, soy sauce, rice vinegar, sugar, and sesame oil to the cucumbers. Toss to combine.
5. Sprinkle with toasted sesame seeds before serving.
