Slow Cooker Oxtail Stew

Main Ingredients
- 2 lbs oxtail
- 2 cups beef broth
- 1 large onion chopped
- 3 cloves garlic minced
- 2 large carrots sliced
- 2 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon vegetable oil
1. Heat the vegetable oil in a pan over medium-high heat. Brown the oxtail on all sides.
2. Transfer the oxtail to the slow cooker. Add the chopped onion, minced garlic, sliced carrots, tomato paste, thyme, salt, and black pepper.
3. Pour in the beef broth. Stir to combine.
4. Cover and cook on low for 8 hours, or until the meat is tender and falling off the bone.
5. Serve hot and enjoy!
