Ingredients 

Main Ingredients

  • 2 lbs Beef chuck cut into 1-inch cubes
  • 1 cup Red wine
  • 2 cups Beef broth
  • 1 cup Carrots sliced
  • 1 cup Mushrooms sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Thyme dried
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.
  2. 2. In the same skillet, add onions, carrots, and mushrooms. Cook until softened, then add garlic and cook for another minute.
  3. 3. Stir in tomato paste and thyme, then transfer the mixture to the slow cooker.
  4. 4. Pour in red wine and beef broth. Season with salt and pepper.
  5. 5. Cover and cook on low for 8 hours, or until the beef is tender.
  6. 6. Serve hot, garnished with fresh parsley if desired.
