  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup ice-cold water
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 pinch salt
  • as needed vegetable oil for frying

Instructions 

  1. 1. Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  2. 2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. 3. In another bowl, beat the egg and mix with the ice-cold water.
  4. 4. Gradually add the wet ingredients to the dry ingredients, stirring lightly to combine. Do not overmix; the batter should be lumpy.
  5. 5. Dip the shrimp into the batter, allowing any excess to drip off.
  6. 6. Carefully place the shrimp into the hot oil and fry until golden brown, about 2-3 minutes.
  7. 7. Remove the shrimp with tongs and drain on paper towels. Serve immediately.
