Grits
- 1 cup stone-ground grits
- 4 cups water
- 1 cup shredded cheddar cheese
- 2 tablespoon butter
- to taste salt
Shrimp
- 1 lb large shrimp, peeled and deveined
- 4 slices bacon, chopped
- 1 small onion, diced
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
- to taste black pepper
Bring water to a boil in a saucepan. Add grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, until thickened, about 20 minutes.
Stir in cheese and butter until melted and smooth. Keep warm.
In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute.
Add shrimp to the skillet and cook until pink, about 3-4 minutes. Stir in lemon juice and parsley. Season with salt and pepper to taste.
Serve shrimp mixture over the grits and top with the cooked bacon.
