Ingredients 

Grits

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup shredded cheddar cheese
  • 2 tablespoon butter
  • to taste salt

Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • to taste black pepper

Instructions 

  1. Bring water to a boil in a saucepan. Add grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, until thickened, about 20 minutes.
  2. Stir in cheese and butter until melted and smooth. Keep warm.
  3. In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  4. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute.
  5. Add shrimp to the skillet and cook until pink, about 3-4 minutes. Stir in lemon juice and parsley. Season with salt and pepper to taste.
  6. Serve shrimp mixture over the grits and top with the cooked bacon.
