  • 2 avocados, diced
  • 0.5 cup red onion, finely chopped
  • 0.25 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Cook shrimp in a skillet over medium heat for about 2-3 minutes per side until pink and opaque. Let cool.
  2. In a large bowl, combine diced avocados, red onion, and cilantro.
  3. Add cooked shrimp to the bowl.
  4. Drizzle with lime juice and olive oil.
  5. Season with salt and pepper. Toss gently to combine.
