She Crab Soup

Ingredients 

Main Ingredients

  • 4 tablespoon Butter
  • 1 cup Onion, finely chopped
  • 1 cup Celery, finely chopped
  • ¼ cup All-purpose flour
  • 4 cups Milk
  • 2 cups Heavy cream
  • 1 lb Crab meat picked over for shells
  • ¼ cup Dry sherry
  • to taste Salt and pepper
  • 1 teaspoon Old Bay seasoning

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and celery, and cook until softened, about 5 minutes.
  3. 3. Stir in the flour and cook for another 2 minutes, stirring constantly.
  4. 4. Gradually whisk in the milk and bring to a simmer.
  5. 5. Add the heavy cream, crab meat, dry sherry, salt, pepper, and Old Bay seasoning. Simmer for 15 minutes, stirring occasionally.
  6. 6. Serve hot, garnished with a sprinkle of Old Bay seasoning if desired.
