Main Ingredients
- 1 cup rolled oats
- 2 cups water
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- ½ cup chopped spinach
- ¼ cup grated cheese
- 1 poached egg optional
Bring water to a boil in a pot.
Add oats and salt, reduce heat to a simmer.
Cook for 5-7 minutes, stirring occasionally.
Stir in black pepper, olive oil, and spinach.
Cook for another 2-3 minutes until spinach is wilted.
Serve hot with grated cheese on top and a poached egg if desired.
