Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ cup chopped spinach
  • ¼ cup grated cheese
  • 1 poached egg optional

Instructions 

  1. Bring water to a boil in a pot.
  2. Add oats and salt, reduce heat to a simmer.
  3. Cook for 5-7 minutes, stirring occasionally.
  4. Stir in black pepper, olive oil, and spinach.
  5. Cook for another 2-3 minutes until spinach is wilted.
  6. Serve hot with grated cheese on top and a poached egg if desired.
