Ingredients

  • 1 lb Italian sausage casings removed
  • 4 cups chicken broth
  • 3 medium potatoes peeled and diced
  • 1 bunch kale stems removed and chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
  2. 2. Add onion and garlic, cook until softened.
  3. 3. Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. Stir in kale and cook until wilted. Season with salt and pepper to taste.
