Saskatoon Berry Oat Muffins

Main Ingredients
- 1 cup Saskatoon berries
- 1 cup rolled oats
- 1 cup all-purpose flour
- ½ cup brown sugar
- ½ cup milk
- ¼ cup vegetable oil
- 1 egg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix together oats, flour, brown sugar, baking powder, baking soda, and salt.
In another bowl, whisk together milk, oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the Saskatoon berries.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
