Main Ingredients
- 1 lb Salt cod soaked overnight and drained
- 2 cups Mashed potatoes
- 1 Onion finely chopped
- 2 Eggs beaten
- ¼ cup Fresh parsley chopped
- to taste Salt and pepper
- ½ cup Flour for dredging
- ¼ cup Olive oil for frying
1. In a large bowl, combine the salt cod, mashed potatoes, onion, eggs, parsley, salt, and pepper. Mix well.
2. Shape the mixture into small patties and dredge each one in flour.
3. Heat the olive oil in a frying pan over medium heat. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
4. Drain on paper towels and serve hot.
