Ingredients 

Main Ingredients

  • 1 sheet puff pastry
  • 2 fillets salmon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 egg (beaten)
  • Salt and pepper to taste
  • 1 cup spinach (optional)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry on a floured surface.
  3. Place salmon fillets on pastry, spread mustard on top.
  4. Season with salt and pepper, add spinach if using.
  5. Fold pastry over salmon, seal edges.
  6. Brush with beaten egg.
  7. Bake for 25 minutes or until golden brown.
