Ingredients 

Main Ingredients

  • 2 fillets Salmon skinless
  • 1 cup Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Preheat grill pan over medium heat.
  2. 2. Season salmon fillets with salt and pepper.
  3. 3. Grill salmon for 4-5 minutes on each side until cooked through.
  4. 4. In a mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  5. 5. In a small bowl, whisk together olive oil and lemon juice.
  6. 6. Drizzle dressing over salad and toss to combine.
  7. 7. Flake grilled salmon and add to the salad. Serve immediately.
