Ingredients

  • 1 lb cooked salmon flaked
  • 1 cup bread crumbs
  • ¼ cup mayonnaise
  • 1 egg beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice fresh
  • ¼ cup green onions chopped
  • 1 tablespoon parsley chopped
  • to taste salt and pepper
  • 2 tablespoon olive oil for frying

Instructions 

  1. In a large mixing bowl, combine the salmon, bread crumbs, mayonnaise, beaten egg, Dijon mustard, lemon juice, green onions, parsley, salt, and pepper. Mix well.
  2. Form the mixture into 8 patties.
  3. Heat the olive oil in a frying pan over medium heat.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. Serve hot with your favorite dipping sauce or a squeeze of lemon.
