Salmon Burgers

salmon fillets, skin removed
finely chopped

Dijon mustard

Instructions
1. In a mixing bowl, combine the chopped salmon, breadcrumbs, beaten egg, Dijon mustard, lemon juice, salt, and pepper. Mix well.
2. Form the mixture into 4 patties.
3. Preheat the grill to medium-high heat. Grill the salmon patties for about 4-5 minutes on each side, until fully cooked.
4. In a small bowl, mix the mayonnaise, chopped basil, and lemon zest to make the lemon basil mayo.
5. Spread the lemon basil mayo on the toasted burger buns. Place the salmon patties on the buns and serve.
