- 2 cups Roasted red peppers
- 1 cup Tomatoes, chopped
- ½ cup Almonds, toasted
- 2 cloves Garlic
- 1 tablespoon Red wine vinegar
- ½ cup Olive oil
- to taste Salt
- to taste Black pepper
Preheat oven to 400°F (200°C).
Place tomatoes on a baking sheet and roast for 20 minutes.
In a blender, combine roasted tomatoes, roasted red peppers, almonds, garlic, and red wine vinegar.
Blend until smooth, then gradually add olive oil while blending.
Season with salt and black pepper to taste.
