Ingredients

  • 2 cups Cherry tomatoes halved
  • 1 cup Zucchini sliced
  • 1 cup Bell pepper sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 12 oz Pasta any type
  • 1 cup Parmesan cheese grated
  • 1 tablespoon Basil fresh, chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cherry tomatoes, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat.
  3. Roast the vegetables in the preheated oven for 20-25 minutes, until they are tender and slightly charred.
  4. While the vegetables are roasting, cook the pasta according to the package instructions. Drain and set aside.
  5. In a large mixing bowl, combine the roasted vegetables, cooked pasta, grated Parmesan cheese, and chopped basil. Toss to combine.
  6. Serve warm and enjoy!
