Ingredients

  • 1 cup couscous
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, cherry tomatoes) chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 cup vegetable broth

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the chopped vegetables with olive oil, salt, pepper, and cumin.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes until tender and slightly charred.
  4. While the vegetables are roasting, bring the vegetable broth to a boil in a saucepan.
  5. Remove the saucepan from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  6. Fluff the couscous with a fork and mix in the roasted vegetables.
  7. Serve warm and enjoy!
