Ingredients 

Main Ingredients

  • 2 lbs Tomatoes halved
  • 1 medium Onion quartered
  • 4 cloves Garlic peeled
  • 2 cups Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ cup Fresh basil chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved tomatoes, quartered onion, and peeled garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast in the preheated oven for 30-35 minutes, until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender. Add the vegetable broth and blend until smooth.
  5. Pour the blended mixture into a large pot. Bring to a simmer over medium heat and cook for 5-10 minutes.
  6. Stir in the chopped basil before serving.
